What is quick & healthy that I can bring to my work for a "healthy" lunch…please read on?
My work is starting this Wellness program. In a couple of weeks, we’re having a lunch where we’re all supposed to bring something healthy. I need some ideas. Something quick & good for you. Due to some people’s allergies, it can’t include chicken, mayo, garlic or cinnamon. Thanks!
How about try making some hummas and bring pita chips? You could also try making tofu tacos or egg salad sanwiches (made with mustard instead of mayo).
Pasta that is loaded with extra vegetables (mushrooms, zucchini, bell peppers, onions, corn, celery, etc)
Instead of chicken noddle soup, try making it with turkey cutlets.
Roasted vegetables, fruit salad, a big salad to share (but with the dressing on the side to help reduce extra calories), butternut squash soup, all fruit smoothies, herb crusted baked fish, etc… there are really a whole lot of things you could bring. Just look up some healthy recipes on line or in a healthy recipe book (some diabetic cook books and vegetarian cook books offer a lot of great tasting healthy recipes.. and you don’t have to be diabetic or vegetarian).
Hopefully you’ll find some tasty dishes and that everyone at your work place will agree. This is just so wonderful that your office has decided to start a wellness program. Good luck!!

What about something simple, like a fruit salad? Just get a bunch of different chopped up fruits (pinapple, apples, grapes, strawberries) and put them in a bowl. If you like, you can make a quick, easy dip to go with the fruits. Just take a jar of marshmallow cream and a small package of cream cheese (softened) and mix together.
Good luck and have fun with it!
